Once our products have been collected, they are transferred to our production facility were they are washed and cut. The pieces are placed on drying trays which are then introduced to the air tunnel. The air tunnel has a constant temperature of between 35 and 45 degrees with a fixed air flow. We use the drying process for the elimination of the water content, this way we avoid any external contamination, atmospheric, dust, insects, birds, etc, giving all the necessary health guarantees.

We should say that what dries the product is not necessarily the heat or direct sunlight but the air current. Without it all the products that we dry would ferment, which would mean having to discard them. We can dry them even with very low temperatures if we maintain a constant airflow, this way we keep all the organoleptic qualities of the products, aroma and taste.

The products are kept in the tunnel until they are dried and dehydrated to their ideal point, with a humidity level of between 5% and 15%, thus removing the necessity for any preservatives or colorants.

All our products are 100% natural, proceeding in their totality from organic agriculture and processed in a handcrafted way. They are certified by CAEE (Andalusian Comitee of Organic Agriculture), in addition they have Calidad Certificada (Certified Quality) from the Junta de Andalusia and two mentions as the best product in our category.

Dried Organic Tomatoes in Organic Extra Virgin Olive Oil: Washed and cut in halves. Drying temperature of between 35-40 degrees. Drying time 14 hours. Finished product humidity level 10-15%. Preserved in organic extra virgin olive oil.

Organic Semi Dried Seasoned Tomatoes: Washed and cut in quarters or halves. Drying temperature of between 35-40 degrees. Finished product humidity level 12-20%. Seasoned with herbs and preserved in oil.

Dried Organic Peppers: Washed, cut in pieces, seeds removed. Drying temperature of between 35-40 degrees. Drying time 8 hours. Finished product humidity level 5-8%.

Dried Organic Peppers in Organic Extra Virgin Olive Oil: Washed and cut in pieces. Drying temperature of between 35-40 degrees. Drying time 10 hours. Finished product humidity level 10-15%. Preserved in organic extra virgin olive oil.

Dried Organic Peaches: Washed, cut in halves and core removed. Drying temperature of between 35-40 degrees. Drying time 12 hours. Finished product humidity level 12-20%.
